⅓ c. Olive oil
6 slices thick cut bacon, chopped
1 clove garlic
1 T. Dijon mustard
2 T. white balsamic or white wine vinegar
Salt and freshly ground pepper
3 T. chopped chives
1 large heart romaine lettuce
1 head radicchio
1 pint cherry tomatoes

Directions:

Heat a drizzle of olive oil over medium-high heat and add bacon; cook until crisp; drain.

In a bowl, whisk together garlic, mustard, and vinegar; stream in olive oil to incorporate the dressing; season with salt, pepper, and chives. Shred lettuce and add to bowl. Halve tomatoes, add bacon, then toss with dressing to evenly coat.
