Lemon Garlic Swordfish Recipe

2 one inch thick Swordfish Fillets, about 6-7 ounces each
2 TB olive oil
Kosher Salt and Black Pepper

Sauce:
2 TB salted butter, softened to room temperature
1 TB fresh chopped chives
2 TB garlic cloves, minced
1/8 tsp kosher salt
1/4 tsp fresh ground pepper
1 TB juice from fresh lemon
1 TB grated lemon peel

Directions:
Preheat oven to 400º with rack in middle position. In a small pan, combine all the lemon garlic sauce mixture ingredients and stir to combine...set aside.

Use paper towels to pat dry the swordfish fillets. Sprinkle both sides evenly with the salt and pepper

In a large, oven proof pan, heat the olive oil over M/H heat. Once hot, add the fish to the pan and let cook until browned on one side, about 3 minutes. Do not move fish around much. Carefully flip fish to the other side, turn stove off, and immediately transfer to the hot oven.

Let fish roast about 5-6 minutes or just until the top is golden and center is cooked through, taking care not to overcook. A minute before fish is done, cook small pan of prepared mixture over M/H heat, stirring constantly, just until melted a bubbly. Immediately turn off heat and pour mixture over the cooked fish.
