2 lb. carrots
½ c. melted butter
3 eggs
1 c. sugar
3 Tbsp. flour
1 tsp. baking powder
1 tsp. vanilla

Directions:
Directions:
Cook carrots until tender. Drain and blend with melted butter until very smooth. Add eggs, sugar, flour, baking powder, and vanilla. Blend well. Pour into greased, 1 qt casserole dish.

Bake at 350º for 45-55 min. Center may crack and fall (that's okay). Cool before serving.

This is Missy's mom's recipe. Don't be fooled, "carrot" anything may sound healthy, but this tastes like a dessert and I cannot get enough of it. It's very sweet, so you could probably use less sugar and it would still be decadent!
I like to make it for Easter.
