For a 9" pie
CRUST:
2 c old fashioned oatmeal
2 Tbsp brown sugar
2/3 c chopped pecans
2 Tbsp melted butter

FILLING:
1/2 CUP - 1 CUP Nestle's semi sweet chocolate chips
1 c softened butter
1 1/2 cup powdered sugar
2 t. vanilla
4 small or 3 large or xtra large eggs

TOPPING:
whipped cream

Directions:
CRUST: Preheat oven to 350°. Spread oats in a shallow pan. Toast in oven about 10 minutes. Combine brown sugar, nuts, and 2 Tbsp. butter with oats. Press on bottom and up just a little on sides of a 9” pie pan. Cool.
FILLING: (This is best done with a mixer with a wire whip attachment.)
Melt chips and cool. Beat butter and sugar on high speed until light and fluffy, about 10 minutes. Add vanilla. Beat. Add eggs, one at a time, beating well after each addition for 5 minutes.* Fold in cooled chocolate. Pour into pie shell. Chill 24 hours before serving. If short on time, place in freezer for 2 hours. Top with whip cream and extra crust if desired.

* If the batter seems to separate, add more powdered sugar, a !/4 cup at a time, beating well after each addition, until it is smooth again.

This is very rich.
We like to freeze the chocolate part and add the whipping cream before serving.
For 10" pie, double everything.
