1 tablespoon olive oil
1 medium onion (for 3/4 cup chopped)
½ red or green bell pepper (for ¾ cup diced)
¾ pound zucchini (about 2 small zucchini)
1 teaspoon bottled minced garlic
6 large eggs
½ cup already-shredded Parmesan cheese
½ cup shredded part skim mozzarella cheese
1 tablespoon reduced-fat bacon bits
Salt and black pepper to taste, optional

Turn on the broiler.
Heat the olive oil on medium in a 12-inch cast-iron or other ovenproof skillet.
Peel and coarsely chop the onion, adding it to the skillet as you chop.
Seed and coarsely chop the pepper half, adding it as you chop.
Stir from time to time.
Rinse the zucchini, trim and discard the ends, and cut each zucchini into 4 strips. Dice the 4 strips into ¼-inch pieces. When all of the zucchini is cut, add it to the skillet.
Add the garlic.
Raise the heat to medium-high. Stir frequently.
While the vegetables cook, beat the eggs in a 2-quart or larger bowl with a whisk until foamy.
Add the Parmesan and mozzarella cheese to the eggs. Stir to mix.
Reduce the heat to medium. Add the egg mixture to the skillet.
Push the vegetables to distribute the eggs and vegetables evenly in the skillet. Shake the skillet to help distribute the egg mixture evenly. Then cook, without stirring, until only the surface is runny, about 7 minutes.
Sprinkle the top with the bacon bits and salt and pepper, if desired.
Immediately put the skillet under the broiler and cook until the surface is just set but not brown, about 2 minutes.
Before serving, run a knife around the edge of the frittata to loosen.
Serve at once by slicing it into 4 wedges. You may have to slice the first wedge in half to remove it from the pan.
