Frittata Recipe

2 tablespoons butter
½ cup diced onions
½ cup diced ham
¾ cup diced cooked potatoes
8 eggs, lightly beaten
Salt and pepper to taste
½ cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 375º F. Place an 8 inch baking dish into the oven to preheat.
Heat butter in a skillet over medium heat.
Add onions and sauté until tender, about 3 minutes.
Add ham and potatoes and sauté until that are lightly browned, another 3-4 minutes.
Remove the pan from the oven.
Transfer the ingredients from the skillet into the baking pan.
Pour eggs over the ingredients in the skillet and stir gently.
Season with salt and pepper.
Cover baking dish with foil, place in the oven and bake for 12-15 minutes until the eggs set.
Remove the foil cover, sprinkle grated cheese on top and put back in the oven for about 5 minutes more until the cheese melts and begins to brown.
Cut the frittata into wedges and serve.
