8 ounces bulk Italian pork sausage
4 green onions, including some tender green tops, sliced
4 ounces medium mushrooms, sliced
2 teaspoons vegetable oil, if needed
2 cups day-old bread cubes
1 cup grated cheddar cheese
4 large eggs
2 cups whole milk
¼ teaspoon dry mustard
¼ teaspoon dried oregano
¼ teaspoon dried basil
½ teaspoon salt
Freshly ground pepper

Directions:
In medium nonstick skillet over medium heat, cook sausage, green onions and mushrooms, breaking up sausage with spoon and adding oil, if needed, until pink is no longer showing in sausage, about 10 minutes. Set aside.
Place bread cubes in bottom of lightly sprayed or oiled 8x11½ baking dish.
Add sausage mixture and sprinkle with cheese.
In medium bowl, whisk together eggs, milk, mustard, oregano, basil, salt and pepper to taste.
Pour over bread-sausage mixture.
Cover and refrigerate for several hours or overnight.
Preheat oven to 350º F.
Bring strata to room temperature before baking.
Bake, uncovered, until set, 45 to 50 minutes.
Let strata stand for 10 minutes. Cut into squares and serve.
