1/2 cup butter, softened
1 cup sugar
2 eggs
1/4 cup milk
1/4 cup lemon juice
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
rind of 1 lemon

Glaze: 1/4 cup lemon juice
1/4 cup white sugar

Preheat oven to 350 degrees.

Combine butter and sugar until light and fluffy. Add eggs one at a time. Add milk and lemon juice and mix well. In a separate bowl, combine flour, baking powder and salt. Gently fold in dry ingredients into wet ingredients just until combined. Add lemon rind. Pour batter into one loaf pan and bake for 55-60 minutes. Remove from oven when loaf bounces back or when knife inserted comes out clean. Let loaf cool in pan for 10 minutes before removing to a wire rack. In a saucepan, combine lemon glaze ingredients (sugar and lemon juice) and slowly heat until sugar is dissolved. Place a plate under the loaf on the wire rack (so the loaf does not get soggy) and slowly pour the glaze over the warm lemon loaf until completely covered on top.
