2 ½ lbs. Russet Potatoes
1 1/2 lbs. Yukon Gold Potatoes
1 cup 2% or whole milk
1 stick butter
1 Tbsp salt
2 cups chopped greens (lacinato kale, swiss chard or cabbage)
6 slices bacon (or vegetarian bacon substitute)

Directions:
Directions:
Peel and chop potatoes.
Boil the potatoes in salted water until soft.
While potatoes are boiling, dice bacon and chop greens.
Fry bacon in large pan until crispy and then use slotted spoon to transfer to paper towel-lined plate.
Add chopped greens to pan and saute in bacon grease until soft.
Drain potatoes.
Put drained (still hot) potatoes back in the pot.
Add half of the butter and all of the milk, puree with immersion blender, or mash (depending on your preference). Add more butter and milk as needed.
Add cooked greens and bacon to mashed potatoes.
Season with salt and pepper.
