4 cups shredded zucchini
1 ¼ cups vegetable oil
4 eggs
1 T. vanilla
3 cups flour
2 ½ cups white sugar
2 tsp cinnamon
1 ½ tsp. salt
1 ½ tsp. baking soda
1/2 tsp. baking powder
1/2 cup chopped pecans

Directions:

Heat oven to 350º F. Generously grease bottoms of 2 baking loaf pans, 9x5x3 inches.
Beat all ingredients on low speed about 1 minute. Scrape bowl sides into batter and beat on medium speed 1 minute. Pour into pans and bake 1 hour or until toothpick inserted into center of loaf comes out clean. Cool in pans 10 minutes and then remove from pans and cool completely.
