Cookie dough:
½ c. butter, softened
½ c. sugar
½ tsp. baking powder
¼ tsp. baking soda
1 egg, beaten
⅓ c. frozen pink or regular lemonade, thawed (reserve 2 tsp. for frosting)
3 drops red or yellow food coloring
1¾ c. packed flour


Frosting:
2 T. butter, softened
2 c. confectioners sugar (10x)
2 tsp. lemonade concentrate
3 to 4 tsp. milk added one at a time to achieve spreading consistency

Preheat oven to 350º. Line cookie sheets with parchment paper.

Mix butter and sugar until light and fluffy. Add baking powder and soda and mix in. Mix in egg, lemonade, and food coloring. Mix in flour half cup at a time.

If mixture is too sticky to work with, refrigerate for 30 minutes.

Drop by teaspoonsful 2 inches apart and bake for 10 to 12 minutes until edges are golden brown.

Cool completely before frosting.
