1 small pumpkin
1 unbaked deep dish pie crust
3/4 c sugar
1/2 tea salt
1 to 1 1/4 tea ground cinnamon
1/2 to 1 tea ground ginger
1/4 to 1/2 tea ground nutmeg
1/4 to 1/2 tea ground cloves
3 eggs
12 ounce can evaporated milk

Preheat oven to 350 degrees. Wash pumpkin well and cut around center. Scoop seeds out. Place cut side down on jelly roll pan, put into oven and add 2 cups water to pan. Bake for 45 minutes to 1 hour or till fork can be inserted into pumpkin easily. Add water if pan gets dry.
Remove from oven and scoop pumpkin from skin. Add 2 c pumpkin to a blender, add eggs, sugar, salt, spices, blend, add milk blend. Pour into pie shell. Bake 350 degrees for 50 minutes or till toothpick comes out clean.

If you like pumpkin pie you will love this recipe. My son requested this pie for his birthday instead of a cake every year since he was young. I cook a large pumpkin and freeze the puree and bake pies all winter.
