2 Gallons Cucumbers
1 cup pickling lime
8 1/2 cups water
1 Tbs. alum
1 cup vinegar
red food coloring

Syrup:
2 cups water
12 cups sugar
2 bags cinnamon candy hearts
8 sticks cinnamon
2 cups vinegar

Directions:
Directions:
1st night - Peel cucumbers and slice in 1/2 inch pieces. Take out seeds. Soak 24 hours in lime and water.

2nd night - Rinse cucumbers well and drain. Soak in ice water 3 hours. Remove cucumbers from ice water. Mix alum, vinegar and a small amount of red food coloring. Add mixture to cucumbers. Cover cucumbers with water and simmer for 2 hours. Drain well.

Mix syrup ingredients and heat. DO NOT BOIL. Pour mixture over cucumbers. Pour cucumbers and mixture in sealing jars. Process 10 minutes.
