1 1/2 c flour
1/2 t. salt
1/2 t. baking soda
1/2 butter
3/4 c granulated sugar
1 egg, beaten
1 Tbsp lemon rind
1 Tbsp. lemon juice
sugar for rolling dough in

Directions:
Directions:
Sift flour, soda, and salt. Cream butter and sugar. Add egg and rind, mixing well. Add flour slowly, then add lemon juice. Beat well. Refrigerate for 1/2 hour. Heat oven to 375º. Grease cookie sheet. Shape dough by tablespoonfuls into balls, roll in granulated sugar and place 2" apart on cookie sheet. Using a fork, press down each ball until it is flat and round. Bake 10-12 minutes or until light golden brown. Remove to rack, cool. Makes 25 cookies.
