5 pounds of chicken thighs and breasts, cut into small pieces.
Green lime or vinegar, for washing the chicken.
1 onion, chopped.
1/2 green bell pepper, chopped.
1/2 red bell pepper, chopped.
Small piece of yellow bell pepper, chopped.
5 cloves of garlic, minced.
3 stalks of green onion, chopped.
Small piece of ginger, minced.
5 peppercorns or pimento seeds (allspice is optional)
1/2 teaspoon of adobo seasoning powder
1 scotch bonnet pepper or jalapeņo (do not cut the scotch bonnet pepper)
1/2 teaspoon of brown sugar
2 tablespoons of olive oil or extra-virgin olive oil
1 cup of chicken broth
2 tablespoons of cornstarch
1/2 cup of water
White rice, for serving

Directions:

Wash the chicken with green lime or vinegar, then drain off the water. Place the chicken pieces in a bowl.
In a separate bowl, mix together the chopped onion, green bell pepper, red bell pepper, yellow bell pepper, minced garlic, chopped green onion, minced ginger, peppercorns or pimento seeds, and adobo seasoning powder.
Add the whole scotch bonnet pepper or jalapeņo to the seasoning mixture for added flavor and spice (do not cut the scotch bonnet pepper).
Season the chicken pieces with the prepared seasoning mixture and mix well. Add the brown sugar and coat the chicken evenly. Let it marinate in the fridge overnight for the best flavor.
Heat the olive oil in a skillet or large pot over medium heat. Add the marinated chicken and cook until it's browned and sealed on all sides.
Pour in the chicken broth and let the chicken simmer for 35 to 40 minutes, or until it's cooked through and tender.
In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the chicken and cook for an additional five minutes to thicken the gravy.
Remove the scotch bonnet pepper or jalapeņo before serving to avoid overwhelming heat.
Serve the delicious Nena's Curry Chicken with white rice of your choice for a satisfying and flavorful meal!
