Whisk together
2 c flour
2 tsp baking powder
1 tsp baking soda
2 T sugar
1 tsp salt

Add: 1 c sour dough starter (Find recipe for Starter in the final section)
1½ c buttermilk
2 large egg
4 T melted butter

After adding liquids to dry, stir or whisk only to get most of the lumps out. Begin frying up pancakes as usual. Best when made in a cast iron pan with a little oil added each time.


If you like to make your own pancake syrup here's a recipe:
1 c granulated sugar
1 c brown sugar
1 c water
1 tsp vanilla or maple flavouring
2 T butter
Bring to a boil water and sugar for about 10 minutes. It thickens as you keep simmering it, but it can turn thick quickly, so keep an eye on it! Add flavouring and butter,
