Sour Dough Waffles Recipe

2 c sour dough starter that was fed within the last 12 hours hours
(Find recipe to make Sour Dough starter in the very last section)
2½ c milk
2 c all purpose flour
You may mix this part the night before if you like but not necessary.

Add:
¾ c melted butter
8 eggs
1½ tsp salt
1 tsp baking soda
¼ c sugar
2 c flour

White Waffle Sauce:
4 c whole milk
½ c sugar
3 slightly rounded T cornstarch
1 T vanilla

Directions:
Mix as instructed using a whisk or beater. Batter should be smooth. Make waffles as usual.
This makes quite a lot so I freeze on cookies sheets lined with parchment paper then package and store in freezer Ziplocs. They reheat quickly in toaster or air fryer.
Interestingly, the waffles do not taste much like sour dough. The texture of them is my favourite part, crispy on the outside, fluffy on the inside.

For sauce, whisk sugar and cornstarch together in saucepan. Slowly add milk whisking to get out all the lumps. Place over heat stirring constantly (for real) I get impatient with this process so I turn heat to medium high and stay with the pot til it's come to a full rolling boil, remove from heat and add vanilla. Serve warm.

This sauce is my very favourite way to have waffles, but adding maple pancake syrup, strawberries and sweetened whipped cream are not disappointing either.
