½ (1-pound) package Acini Di Pepe, uncooked
1 egg
½ cup sugar
1 T flour
¼ tsp salt
1 (15¼ - oz) can juice packed crushed pineapple drained, reserving juice
1 (16 oz) can fruit cocktail, drained
1 cup marshmallows
1 cup whipping cream, whipped

Directions:
Directions:
Cook pasta as package directs;drain.
In a heavy saucepan beat egg with wire whisk until foamy.
Stir in sugar, flour, salt and reserved pineapple liquid.
Over low heat, cook and stir until thickened and bubbly.
In a large bowl, combine pasta with egg mixture.
Chill thoroughly, about one hour.
Stir in pineapple, fruit cocktail and marshmallows.
Fold in whipped cream.
Cover, chill thoroughly. Stir before serving.

Discovered this yummy salad while living in Denver! I have made it ever since, typically at Easter!

Many times I add mandarin oranges, either as a replacement for fruit salad or in addition to…. I have also used 20oz cans of crushed pineapple before.
