2 T. reduced-sodium soy sauce
2 T. rice vinegar
1 tsp. grated peeled fresh ginger
1 large scallion, thinly sliced
1 lb. skinless cod fillet, 1 -inch thick

Directions:
Directions:
Combine the soy sauce, rice vinegar, and ginger in a bowl. Sprinkle the white parts of the scallion slices on the bottom of a 9" round baking dish. Cut the cod into 4 equal pieces and place in the dish. Spoon the soy sauce mixture over the fish. Cover with plastic wrap; then prick a few holes in the plastic. Microwave on high just until the cod is opaque in the center, 507 minutes. Sprinkle with the remaining green parts of the scallion slices.
