8lb Brisket for 10 people
garlic
paprika
salt
pepper
cayenne
carrots
onions
prunes
potatoes
yams
16oz honey

season brisket heavily and let sit at least 30 minutes
cut up vegetables and potatoes nd put under brisket in Dutch oven
pour honey all over brisket and put in crock pot fat side up
cook 4 to 4.5 hours at 350

I found that cooking the brisket the day ahead at 220° for 10 hours with the temperature probe in the flat set at 195. I have also added two tablespoons of my habanero jelly to the honey mixture. Once the brisket has reached 195 take it out of the oven let it cool then remove as much fat as possible slice put the flat part back in first in the juice cover with the tongue refrigerate. Next day skin all remaining fat off the brisket put it back in the Dutch oven put it in a 200° oven for 4 hours
