1 lb of boneless skinless chicken (breasts, tenders, whatever)
3-4 egg whites
1 cup flour
1/3 cup bread crumbs
Frying oil (I use canola or peanut)
Spices: salt, pepper, paprika, cayenne

Directions:
Directions:
1. Heat your frying oil to 350-ish degrees
2. Beat the chicken with the rough side of a meat mallet before patting dry with paper towels and adding salt & pepper to both sides
3. In a bowl, whisk egg whites until frothy
4. In a new bowl, combine flour, bread crumbs, and spices; mix
5. Coat chicken in egg whites, then flour mixture, then place in hot frying oil until golden and internal temp is 165. Remove from pan
6. Once slightly cooled, return tenders to the pan briefly to double fry and make them extra crispy
