Ingredients for the Stew:
8 cups vegetable broth
4 cups potatoes, cut into bite size
2 x15 ounce can white beans, drained and rinsed
4 cups carrots, chopped
2 cups frozen peas
2 cups frozen corn
1 medium onion
2 cloves garlic, minced
1 tablespoon Herbs de Provence seasoning mix
1 tablespoon garlic powder
1 tablespoon onion powder

Ingredients for the Dumplings:
2 cups whole wheat flour
2 cups plant milk (UNSWEETENED, otherwise the dumplings are too sweet)
1/2 cup raw cashews
1 tablespoon baking powder
1 tablespoon Herbs de Provence seasoning mix

Stew:
In a large dutch oven, water sautee the onion and carrots for 5-10 minutes. Add the garlic and sautee for another 30 seconds. Then add the vegetable broth, stirring to deglaze the dutch oven. Once deglazed, add all the remaining stew ingredients, stir well to combine. Cook until vegetables are fork tender, around 30 minutes.

Dumplings:
In the Vitamix, add the plant milk and raw cashews and blend until well combined. Add the mixture to a large bowl. Fold in the whole wheat flour, baking powder, and seasoning blend, mix until all combined. Using a large spoon add in the dumpling batter on top of the stew.

Preheat oven to 350 degrees F. Bake uncovered for around 30-40 minutes. Dumplings should be golden brown. Serve warm.

I first made this April 2022, and it is really good! I love it, it has great flavor. The recipe didn't call for all these veggies, but there is so much broth and it would be a lot better with all the vegetables listed in this adaptation recipe (I think)!! Zoe, Ava, and Matt liked the stew but not the dumplings. I liked both. So I'll make the recipe with the dumplings, but I won't serve any dumplings to the kids. More for me!
