Meatloaf

1 lb. 90% lean ground beef (We used lean beef from the Ward Farm)
1 cup dried bread crumbs
1/2 cup diced yellow onion
1/2 cup milk
1 large egg beaten
2 tbsp. ketchup
1 tbsp. Worcestershire sauce
1 tsp. dried parsley leaves
3/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. ground black pepper

For the Topping:

1/4 cup ketchup
2 tbsp. packed light brown sugar
1 tbsp. red wine vinegar

1. Preheat the oven to 350º
2. Mix all of the meatloaf ingredients in a large bow. Use your hands to make sure the
ingredients are evenly mixed.
3. Place the meatloaf mix in an ungreased 4x8 loaf pan.
4. Whisk the 3 Topping ingredients together.
5. Pour the topping sauce over the meatloaf mix.
6. Cook for 55 minutes.
7. Let stand for five minutes and then slice into servings

This is a great tangy meatloaf. Even though it calls for lean beef it is quite moist. For a more carb conscious meal, substitute a cup of parmesan cheese for the bread crumbs.
