4 c. (about 3 large) yellow squash, sliced
1/2 c. onion, chopped
35 buttery round crackers, crushed (about 1 sleeve)
1 c. cheddar cheese, shredded
2 eggs, beaten
3/4 c. milk
1/4 c. butter, melted
1 t. salt
pepper to taste
2 T. butter

Directions:

Preheat oven to 400F

In large skillet with lid, cook squash and onion in a small amount of water. Cover and cook about 5 minutes or until tender. Drain well and place in LARGE bowl. Set aside for a moment to cool.
In a MEDIUM bowl, mix together cracker crumbs and cheese. Stir HALF the cracker mixture into squash and onions. In SMALL bowl, mix together milk and eggs, then add to squash mixture. Stir in 1/4 c. melted butter and season with salt and pepper.
Spread into 9x13 baking dish. Sprinkle with rest of cracker mixture and dot with 2 T. butter. Bake for 25 minutes or until lightly browned.
