8-10 medium potatoes, peeled and diced
8 oz. cream cheese
8 oz. sour cream
1/2 c. butter
1/4 c. (or more) milk
2-4 cloves garlic, minced
1/4 c. chopped chives (or 1t. dried chives)
2 1/2 t. salt (or to taste)
1 t. pepper (or to taste)

Butter a 9x13 casserole dish.

Fill large pot with potatoes and cover with water. Cover, venting lid so some steam escapes. Bring to boil and cook until potatoes are tender when tested with a fork. Drain potatoes and mash. Add cream cheese and butter immediately to potatoes, beating well. Add sour cream, milk, garlic, chives, salt and pepper and mix (I use hand mixer) until smooth. Add a little more milk if needed to make it smooth but not runny.

Pour into buttered casserole dish. Cover and refrigerate overnight. (this is important to meld flavors)

Remove from refrigerator 15 minute before baking. Sprinkle potatoes with paprika, if desired. Bake in 350F oven for 30 minutes.

I needed a great recipe for mashed potatoes that I could make ahead and I was so glad when I found this recipe in a newspaper article, tried it, tweaked it and made it my own! It's my hubby's favorite mashed potatoes!
