4 medium potatoes, sliced thin
2 T. olive oil
1 t. salt (or to taste)
pepper to taste

Preheat oven to 450F

In gallon bag or large bowl, toss all ingredients until well coated with oil. Spread in a single layer on large baking sheet or use 2 baking sheets if necessary. Bake for 20 minutes. Turn with spatula and cook until crisp, about 8 more minutes.

Serve immediately. (serves 4)

Great as a side dish to most any meat dish.

I make these in the air fryer too! Cook about the same temp. and a little less time. Just make a sheet of aluminum foil to fit air fryer basket for less mess to clean up!
