For the Cake:
¾ cup salted butter, softened, plus more for greasing the pan
2 cups granulated sugar
¾ cup cocoa, preferably Ghirardelli's or Valrhona
4 eggs, separated
1 teaspoon baking soda
2 tablespoons cold water
½ cup cold coffee
½ cup Kahlua
1¾ cups cake flour, plus more for dusting the pan
1 tablespoon vanilla extract

For the Glaze:
1 cup Kahlua
½ cup powdered sugar
Fresh Whipped Cream, (see recipe), for garnish
Fresh Strawberries, sliced, for garnish

Directions:
1). Preheat the oven to 325 degrees. For the cake, in the bowl of an electric mixer fitted with the paddle attachment on medium high speed, cream the butter and sugar until light and fluffy, about 2 to 3 minutes. Add the cocoa and mix until combined. With the mixer running on medium speed, add the egg yolks one at a time, mixing for one minute between each addition. Stir in the vanilla.

2). Dissolve the baking soda in the water. Combine the soda and water mixture with the coffee and Kahlua. With the mixer on low, add the flour and the Kahlua mixture alternately in 3 batches, beginning and ending with the flour. Mix just until combined after each addition.

3). Remove the cake batter to a large bowl. Wash, clean and dry the mixing bowl. Fit the mixer with the whisk attachment and add the egg whites, mix on high speed until stiff peaks form. Gently fold the egg whites into the cake batter.

4). Grease a 10-inch Bundt pan with softened butter. Dust the pan with flour shaking off any excess. Pour the batter into the prepared pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack.

5). For the glaze, pierce the top of the cake with a fork. Combine the Kahlua and powdered sugar and whisk until smooth. Pour the glaze over the warm cake. When ready to serve, make the Fresh Whipped Cream according to the instructions. Serve the cake with a dollop of cream and sliced strawberries.
