1 small onion, finely diced
1 small green pepper, finely diced (optional)
1 lb ground beef (ground round for vegetarian)
1 thick slice bread, soaked in milk
1 tablespoon sugar
2 tablespoons sweet red wine (sherry or port)
2 tablespoons curry powder
1/2 cup vinegar or lemon juice
salt and pepper to taste
1 tablespoon smooth apricot jam (from South African store) - or Canadian brand is ok
1 can peach slices - cut in half, juice reserved
2 eggs
1/2 cup milk
2 bay leaves

Directions:

Preheat oven to 350º
Sauté onion and pepper in olive oil, add beef and cook over medium heat.
Add bread and all other ingredients and cook through until done.
Add peach slices and some of the juice and mix well.
Transfer mixture to casserole dish.
Beat eggs and add 1/2 cup milk, plus dash of salt and pepper.
Pour egg mixture over meat mixture. Top with bay leaves.
Bake at 350º for 35-45 minutes until done.
Serve with yellow rice, peas and Mrs. Balls chutney.
To cook yellow rice, add 1 teaspoon turmeric to 1 cup rice and cook as usual.
