2 sheets of frozen puff pastry
8 oz. of Brie cheese
1 cup Apricot preserves or Cranberry sauce
½ cup finely chopped pecans
4 sprigs fresh rosemary for garnish

Directions:
Place Brie in the freezer for 15 minutes to firm up. Preheat oven to 375º. Very generously grease 24 mini muffin pans with PAM.
Unroll 1 sheet of puff pastry on a lightly floured surface. Roll out to 10 x 14 inches. Cut lengthwise into 4 even strips and cut crosswise in 6 even strips. Separate the squares and press into the muffin cups. Prick the bottom of the pastry with a fork.
Dice the Brie into 24 pieces. Place one piece of Brie in the center of each mini muffin cup. Top each with 1 tsp. of preserves, sprinkle with a touch of salt and add ½ tsp. of pecans.
Bake for 18 - 20 minutes or until golden brown. Let cool in the pans for 3 minutes Transfer to a serving plate and garnish with rosemary.
