1 lb. ground turkey sausage
1 lb. ground beef
1 large sweet onion, diced
3 tbsp. sesame oil
2 tbsp. rice vinegar
3 tsps. minced fresh garlic
1 tsp. ground fresh ginger
½ cup low sodium soy sauce
¼ cup teriyaki sauce
2 tbsp. Mirin
1 16 oz. bag of coleslaw mix
3/4 cups grated on "matchstick" sliced carrots
3 green onions, thinly sliced
1 small package glass noodles
salt and pepper to taste

Cook ground turkey sausage and beef until no longer pink. Drain and return meat to skillet. Add onions, sesame oil and all liquids to the skillet. Cook until onion is tender. In the meantime cook the glass noodles in boiling water by the package instructions.
Add the garlic, ginger, carrots and coleslaw mix to the skillet. Cook, stirring for about 5-7 minutes, or until the coleslaw starts to wilt. Remove from the heat. Add the glass noodles and combine. (I usually chop the noodles into smaller bites) Stir in the green onions and season with salt and pepper, to taste.
Put about 1/3 cup of the filling into your wrappers. Wet the corners and roll to seal. Deep fry until crispy.

This is really good to eat in a bowl by itself as well. It's really important to add the sesame oil, this is where the great flavor comes from.
