1 Tbsp canola oil
2 10 once cans rotel or diced tomatoes with chilies
1 cup chicken broth
1 Tbsp chili powder
1 tsp ground cumin
1/2 tsp salt
1 15 oz can black beans, drained and rinsed
1 10 bag frozen corn, or one drained can
2 large cans or 4 cups shredded chicken
12 small corn tortillas, cut into quarters
3 cups of cheese (monterey jack, fiesta cheddar, etc)
sour cream
1/3 cup chopped fresh cilantro

Preheat oven to 375. Grease a 9 x 13 casserole dish with the oil (or spray oil)
Next, mix the diced tomatoes with chicken broth, chili powder, salt and cumin in large mixing bowl. Stir in black beans, corn, chicken, tortilla triangles, and 1 cup of cheese.
Mix until completely combined. Next, move the mixture into greased casserole dish and spread out evenly, making sure that you cover all corners. Cover the dish with aluminum foil and bake in the oven for 25-30 minutes.
Increase oven to 400 and carefully remove foil from top of the casserole. Sprinkle with remaining cheese and continue to bake until the cheese is melted and just starting to brown (about 15 minutes).
Finally, remove from oven and drop spoonfuls of sour cream on top. Sprinkle with cilantro and serve.
