400-600 g Halloumi
1 container hummus
4 large carrots, julienned
Small red cabbage, shredded
Red onion, sliced
1/4 cup red wine vinegar
1/4-1/2 cup mayonnaise
Garlic (or garlic paste)
Sugar
Olive oil

Directions:
Directions:
Cook rice in rice cooker.
Cut halloumi into 1/4 inch slices, rinse and pat dry with paper towels.
While rice cooks, heat a small pot over medium heat. When hot, add onions, half the vinegar, 1/2 cup water and 1 tablespoon sugar. Season with 1 tablespoon salt. Cook, stirring occasionally, for 4-5 minutes. Transfer pickled onions with liquid to small bowl and set aside.
Saute julienned carrots over medium heat in olive oil. Set aside.
Saute cabbage over medium heat in olive oil. Set aside.
Heat large pan over medium heat, add olive oil and pan fry halloumi until golden brown, 2-3 minutes per side. Set aside.

Dressing:
Mix mayonaisse, hummus and remaining red wine vinegar in a separate bowl, season with salt & pepper

To serve:
Serve rice, topped with all other ingredients and a dollop of dressing.
