4 x Beyond Meat patties
1 packet taco seasoning
1.5 cups basmati rice
Garlic paste (1 tablespoon)
Tomato sauce (2 tablespoons)
Shredded nacho cheese blend
1 container sour cream (2 cups)
Lime juice
Salt & pepper
Tostitos tortilla chips
Broccoli slaw
Olive oil


Directions:
Directions:
Heat olive oil in frying pan, break Beyond Meat into bite-size pieces and saute in oil, sprinkling taco seasoning on while cooking.
In medium sized pot, heat 1 tbsp olive oil and add garlic, tomato sauce and rice and cook for 1-2 minutes until fragrant, stirring often. Add 2.5 cups water and bring to boil over high heat. Once boiling, reduce heat to low and cook, covered, until rice is tender (approx. 12-14 min). Alternatively, after sauteing the rice, tomato sauce and garlic, it can be transferred to rice cooker for the remaining cook time.


While rice is cooking, prepare crema:
1 cup sour cream
Lime juice to taste
Salt and pepper to taste
Mix together

To serve:
Serve rice, topped with Beyond, crushed Tostitos, shredded cheese, broccoli slaw and a dollop of crema.
