Ingredients:  
1 Medium eggplant, pared and cut into 1/2 inch slices
½ cup butter melted
¾ cup fine bread crumbs
¼ tsp salt
1 10 oz bottle of spaghetti sauce with mushrooms (or pizza sauce)
1 Tbs crushed oregano leaves
1 cup shredded Mozzarella cheese

Directions:
Directions:
Dip sliced eggplant in butter and then in mixture of bread crumbs and salt. Place on greased cookie sheet. Spoon sauce onto each slice. Sprinkle with oregano and cheese. Bake at 450º for 10 to 12 minutes.
