Chicken Quesadillas Recipe

3 tablespoons unsalted butter
3 tablespoons brown sugar
1/2 teaspoon wine vinegar
2 large onions, sliced
2 shreaded cooked chicken
2 tablespoons vegetable oil, divided
8 large flour tortillas
1 pound grated smoked Gouda Cheese


Fresh Gucamole
Sour Cream

Heat butter in skillet over medium-low heat. Add sugar and
vinegar; stir to dissolve. Add onion; cook, stirring
occassionally, until onions are tender about 30-35 minutes.
Heat 1 tablspoon oil in large skillet over medium heat. Place
tortilla on clean work surface. Sprinkle cheese, shredded
chicken and onion over half the tortilla; fold. Cook until cheese
begins to melt about 1-2 minutes. Repeat process. Serve with
gucamole and sour cream.
