1 pound baking potatoes
1 3/4 cups unbleached white flour
1/2 salt
1/2 teaspoon pepper
Sprinkle Paprika
2 tablespoons fresh thyme or parsley

Directions:
Directions:
Peel Potatoes, cut in quarter and bring to a boil. Reduce heat,
cover and cook until potatoes are tender.

In a large bowl, stir together the flour, salt, pepper, paprika and
chopped thyme.

Add the warm potatoes and place on floured surface. Knead
dough just until mixed. Let rest 15-20 minutes.

Roll 1 inch rolls out on floured board into logs. (you can make
diagnoal straight designs on top of logs)

Bring a large pot in water to boil. Add gnocchi. Let them rise to
top of surface and lower and simmer 10 minutes, uncovered.

Drain and serve with favorite pasta sauce.
