1/4 cup olive oil
1 2 1/2 to 3 pound broiler fryer
Several Sprigs of Rosemary
1 tablespoon butter
1/2 teapoon salt
1/4 teaspoon pepper
2 small new red potatoes
30 cloves garlic

Directions:
Directions:
Preheat oven to 375 degree.

Rinse chicken and pat dry. Stuff with sprigs of Rosemary
inside cavity along with butter. Sprinkle with 1/4 teaspoon salt
and pepper. Place chicken in roasting pan. Wash potatoes.
Place potatoes and garlic cloves around chicken. Sprinkle salt
on potatoes and drizzle olive oil.
Roast chicken 375 degrees for about 1 1/2 hour to 2 hours.
