2 TBL olive oil
2 TBL butter
1 lb boned chicken cut into pieces (breast or thigh)
1/2 medium onion, chopped (approx. 1 cup)
1 tsp minced garlic
1 tsp chopped fresh ginger
1 serrano chili, cored and finely chopped
1 (15oz) can petite diced tomatoes, drained
1 (8oz) can tomato sauce
2 tsp. garam masala
1 tsp curry powder
1/2 cup heavy cream
Chopped cilantro for garnish (optional)

In a large nonstick skillet, heat the oil and butter together over medium heat until
butter is melted. Add the chicken, onion, garlic, ginger and serrano chili. Saute
until the chicken is mostly cooked and the onion is translucent (about 7-10 minutes)

Stir in the tomatoes, tomato sauce garam masala and curry powder. Reduce heat
and simmer 10 minutes. Stir in cream and heat approx. 5 minutes. Garnish and
serve with rice and naan.
