1 hothouse cucumber
1 tsp salt
3 tbsp finely chopped fresh mint, plus a few sprigs to garnish
1 clove garlic, crushed
1 tsp superfine sugar
1 cup strained thick, Greek plain yogurt
paprika to garnish (optional)

Directions:
1. Peel the cucumber. Reserve a little to use as a garnish if you choose to cut the rest in half lenthwise. Remove the seeds with a teaspoon and discard. Slice the cucumber thinly and combine with salt. Leave for approximately 15-20 minutes. Salt will soften the cucumber and draw out any bitter juices.
2. Combine the mint, garlic, sugar, and yogurt in a bowl, reserving a few sprigs of mint as decoration.
3. Rinse the cucumber in a strainer under cold running water to remove the salt. Drain well and combine with the yogurt. Decorate with cucumber and mint. Serve cold. Tzatziki is traditionally garnished with paprika.

Tzatziki is a Greek cucumber salad mixed with yogurt, mint, and garlic. It is traditionally served with grilled lamb or chicken. However, it is also good with salmon, trout, tuna or your choice of fish.
