1 1/4 lbs chicken breasts

Blackening spice rub:
1 T garlic pwd,
1 T pepper
1/2 T salt
2 tsp cumin
2 tsp onion pwd
1 tsp Italian seas
1 tsp paprika
1/2 tsp chili pwd
1 tsp cayenne (optional, Becca omits)

2 T Extra Virgin Olive Oil
3 T minced garlic
1/4 cup white wine (optional)
3 cups heavy cream
1 cup roughly chopped sun dried tomatoes ( optional, Becca omits)
1 lb fettucine
1/2 cup Parmesan
1 tsp salt and 1 tsp pepper

Directions:
Directions:
Dredge chicken breasts in spice rub. Place in a cast iron skillet, heated on high.
Cook chicken, blackening both sides. Remove and slice into strips. In large skillet, heat oil. Add garlic and lightly brown it, 2-3 min. Stir in wine, if using. (Not needed if using nonstick pan, otherwise replace with broth). Pour in cream and bring to a simmer and cook until sauce is reduced by 1/2. Add teh sun dried tomatoes (if using) and chicken slices.
Meanwhile, cook fettucciine and drain
When cream sauce is a desired consistency, stir in Parmesan, pepper, salt, and cooked pasta. Toss and serve.
