One 8-ounce package cream cheese, room temperature
½ cup salted butter, room temperature
2 teaspoons pure vanilla extract
4 cups sifted powdered sugar
½ cup unsweetened imported cocoa, preferably Ghirardelli's or Valrhona
5 to 6 tablespoons heavy cream, chilled

1). In the bowl of an electric mixer fitted with the paddle attachment, beat the first 3 ingredients at medium speed until light and fluffy, about 2 to 3 minutes.

2). Whisk together the powdered sugar and cocoa in a medium bowl. With the mixer on low, gradually add the powdered sugar mixture in 3 batches and 5 tablespoons of the cream in 2 batches, alternately, beginning and ending with powdered sugar. Mix until well blended after each addition and scrape down the sides of the bowl as needed. If needed, add the additional 1 tablespoon of cream, 1 teaspoon at a time, to reach the desired consistency. Increase the speed to medium-high and beat 1 to 2 minutes more or until light and fluffy.
