1 16 oz. bag of baby carrots
2 T. olive oil
2 T. minced garlic
2 T. grated parmesan cheese
1/2 t. dried oregano
1 T. melted butter (optional)

Directions:
Directions:
Preheat oven to 400º. Line a baking sheet with a silicone baking mat or parchment paper.

Pat carrots dry with a paper towel & place in a large bowl. Add olive oil and spices (except butter) to carrots and toss gently to coat. Spread carrots in a single layer on a prepared baking sheet. Pour any remaining oil in the bowl, cover the veggies.

Roast in the oven for 30-35 minutes or until soft & hot. Place carrots in a serving dish, add melted butter & gently toss to coat.
