Sauce:

1 1/2 tsp. tamarind puree
3 T. brown sugar
2 T. fish sauce
1 1/2 T. oyster sauce

Stir Fry:

2 T. oil
1/2 onion, sliced
2 garlic cloves, chopped
5 oz. chicken breast, thinly sliced
2 eggs
1 1/2 c. beansprouts
1/2 c. firm tofu, cut into batons
1/4 c. garlic chives, cut into 3 cm pieces
1/4 c. finely chopped peanuts

Garnish:

Lime wedges
Chili pepper
Beansprouts

Directions:
Directions:
Place noodles in large bowl. Pour over plenty of boiling water. Soak for 5 minutes. Drain. Rinse under cold water. Don't let set for more than 10 minutes.

Mix sauce in bowl. Heat oil in pan over high heat. Add garlic and onion, cook for 30 seconds. Add chicken and cook 1 1/2 minutes until mostly cooked.

Push to one side of the pan. Pour egg on other side. Scramble with wooden spoon. Mix into chicken. Add beansprouts, tofu, noodles and sauce.

Toss until noodles absorb sauce. Add garlic chives and half the peanuts. Toss. Remove from heat. Serve immediately. Sprinkle with remaining peanuts and lime wedges on side. Squeeze over lime juice to taste before eating,
