4 cup(s) sweet potatoes
1 can(s) Coconut MIlk
4 cup(s) water
1/4 cup(s) Grace Margarine, melted
2 1/4 cup(s) brown sugar
2 teaspoon(s) vanilla essence
1/2 cup(s) flour
1 1/2 cup(s) cornmeal
2 teaspoon(s) nutmeg
2 teaspoon(s) cinnamon powder
1 1/2 teaspoon(s) salt

Directions:
Directions:
Peel and grate sweet potatoes. Pre-heat oven to 180°C (350°F).
Combine Coconut Milk, water, Margarine, sugar, raisins and vanilla, and stir.
Mix together flour, cornmeal, nutmeg, cinnamon,salt; set aside.
Empty flour mixture into the grated potatoes. Gradually add the combined liquid and stir to remove lumps.
Pour mixture into a well greased baking pan and bake for approximately 2 hours.
