Ingredients: 4 large tortillas 1 c. shredded cheddar cheese 1 c. shredded monterey jack cheese 4 c. lettuce
2 c. water 1/3 c. soy sauce 3 T. sugar 2 T. salt 2 T. white distilled vinegar 1 T. ground chipotle chile pepper 2 tsp. hickory liquid smoke 2 tsp. paprika 2 tsp. garlic powder 1 tsp. onion powder 1 tsp. pepper 4 chicken breasts
Sauce:
1/2 c. mayo 2 T. minced onions 2 T. diced tomatoes 1 T. buttermilk 1 T. white distilled vinegar 2 tsp. minced cilantro 1 tsp. canned green chili pepper 3/4 tsp. paprika 1/2 tsp. sugar 1/4 tsp. salt Pinch dried dill weed Pinch cumin Pinch cayenne pepper
Pico
2 medium tomatoes, diced 1/3 c. diced red onion 1 jalapeno, seeded and diced 2 tsp. lime juice 2 tsp. minced cilantro 1/4 tsp. salt 1/4 tsp pepper

Directions:Combine marinade ingredients in medium bowl. Stir well until sugar has dissolved. add four chicken breasts to the marinade. Cover and chill for 2 hours. Don't marinate more than that.
While chicken marinates, prepare dipping sauce by combing ingredients in medium bowl. Stir well then cover and chill.
Combine pico ingredients. Cover and chill.
Preheat grill to medium/high heat. Grill chicken 4-7 minutes per side.
Build each roll-up by first laying a large tortilla in a large skillet over low heat. Sprinkle 1/2 c. combined cheeses over surface of tortilla while it heats up in the pan. When cheese begins to melt, remove tortilla from pan.
Sprinkle 1 c. lettuce in a strip across center of tortilla, followed by 3 T. pico. Slice one grilled chicken breast into bite-sized chunks and arrange chicken on lettuce. Fold ends of tortilla over filling, then roll tortilla from bottom.
Make diagonal cut across center of roll-up and serve with dipping sauce. |
