2 large eggs
1 T. minced garlic
2 T. fresh chopped parsley
Salt and pepper
3 large chicken breasts, halved to make 6 fillets
1 c. Panko bread crumbs
1/2 c bread crumbs (Italian or golden)
1/2 c. Parmesan
1 tsp. garlic powder
1/2 c. olive oil for frying

Sauce:

1 T. olive oil
1 large onion
2 tsp. minced garlic
14 oz. tomato puree
Salt and pepper
1 tsp. dried Italian herbs
1 tsp. sugar

Topping:

8 oz. mozzarella
1/3 c. Parmesan
2 T. basil or parsley

For chicken: Heat oven to 430. Lightly grease baking dish with cooking spray. Set aside.

Whisk eggs, garlic, parsley, salt and pepper in a shallow dish. Add chicken into the mixture. Coat evenly. Cover with plastic wrap and allow to marinate at least 15 minutes or overnight for deeper flavor.

When chicken is ready, mix bread crumbs, Parmesan and garlic powder in a bowl. Dip chicken into mixture to evenly coat.

Heat oil in large skillet over medium-high heat until hot. Fry chicken until golden, 4-5 minutes each side.

For sauce, heat oil in a pot. Fry onion until transparent, about 3 minutes. Add garlic until fragrant, about 30 seconds. Add tomato puree, salt, pepper, Italian herbs and sugar (if using). Cover with lid to simmer 8 minutes or until sauce thickens.

Place chicken on prepared baking dish and top each with 1/3 c. sauce. Top each chicken breast with 2-3 slices of mozzarella and about 2 T. Parmesan. Sprinkle with basil or parsley.

Bake 15-20 minutes.
