3 slices of bacon
4 Tbsp. butter divided
1 cup of chopped onion
1 med. to Large head of cabbage chopped
1 tsp. of Kosher salt
1/4 tsp. of freshly cracked black pepper
1/4 tsp. Cajun seasoning
2 tsp. of apple cider vinegar (optional)
dash of dried red pepper flakes (optional)

Directions:
Directions:
Chop bacon and cook until fat is rendered, add 2 Tbsp. of butter, and onion. Sauteé for about 4 minutes. Add a splash of water to the bottom of the skillet to deglaze the bits at the bottom. Add half the cabbage, salt pepper, and Cajun seasoning and stir. Add the remaining cabbage, stir reduce to a low simmer, cover and cook for about 30 minutes or until cabbage reaches desired consistency stirring several times. Stirring the remaining 2 Tbsp of butter and the side of vinegar, taste and adjust salt and pepper and add the red pepper flakes.
