4 or 5 small potatoes
2 tablespoons all-purpose flour
1 egg
1/4 teaspoon baking powder
1/3 cup milk

Directions:
Directions:
Shred potatoes in a medium bowl. Add egg, flour, baking powder and milk mixing well. Fry in skillet with only enough oil to coat the bottom. Put large spoonful scoops carefully into hot skillet. Reduce heat, if necessary to prevent burning and brown well on both sides until golden. Serve plain or with syrup or honey, if desired.

I make these pancakes to use up left-over mashed potatoes. It’s quick and a good accompaniment for breakfast, lunch or dinner.
