1 cup fresh squeezed lemon juice (6 - 8 lemons)
Zest of 2 lemons
1 1/2 cups sugar
6 large eggs
12 TBL ( 1 1/2 sticks) unsalted butter, cut into pieces

Directions:
Directions:
Whisk the juice, zest, sugar and eggs in a 2-quart heavy saucepan.

Stir in the butter and cook over medium - low heat. Use caution so the curd does not burn.

Whisk frequently until curd is thick enough to coat the back of a spoon. About 6 - 8 minutes

Strain the curd through a mesh strainer to remove any bits.

Transfer to a bowl, cover surface with plastic wrap and chill at least 1 hour.

Serve in a pie, tart shells, with scones, cookie filling, cakes, pastries, etc.
