1/2 c. olive oil, divided, plus more if needed
1 c. panko crumbs
kosher salt and pepper
1 small white onion, thinly sliced
2 garlic cloves, crushed thinly
3 Tbsp. tomato paste
3/4 tsp crushed red pepper flakes
2 -(15 ounce) cans white beans rinsed and drained
thin slices of lemon as garnish

Heat 1/4 c. oil in skillet. add the panko crumbs and toss until lightly golden, about 6 minutes. Remove from heat and set aside for garnish.

Clean out skillet. Add the other 1/4 c. of olive oil. Sauté the onion and garlic together until onion is translucent. Add the tomato paste and crushed red pepper. Stir and heat until the paste turns a brick red, about 2 minutes.

Add the beans and 2 cups of water. Season with salt and pepper and cook until the beans are creamy and tender and most of the liquid has evaporated, about 20 minutes.

Transfer beans to serving dish. Top with panko crumbs and line the side of the dish with the lemon slices. Serve immediately.

Meredith requested this dish for her birthday dinner. It really is good. I think this would be a nice meatless meal with a fresh baguette. Yummy. Recipe is from Alison Roman's cookbook.
